Ingredients
– 4 zucchini, graded into long shreds
– 2 carrots, finely chopped
– 3 eggs
– 2 cup of cooked red lentils (can cook with quinoa)
– 1 cup of cooked quinoa
– 2 cups of cooked brown rice
– 1 cup parseley
– 1 cup cilantro
– 1/2 cup onion/green onion
dill, mint, oregano
– 1 oz lemon juice
– salt
– 1 cup brown rice flour (add to increase consistency)
– vegetable oil for frying
Instructions:
Cook the brown rice.
Cook red lentils and quinoa together.
Blend all ingredients in a kitchen food processor until mixed and finely grated.
form into medium sized balls and flatten in a frying pan.
Fry until golden brown.
serve with plain yogurt.
