This recipe uses a thawed pie crust, silky sweet‑potato filling, and your own homemade condensed milk made from whole milk and coconut sugar. The result is rich, warm, and naturally caramel‑sweet.
Homemade Condensed Milk
- Combine 2 cups whole milk and 1/2 cup coconut sugar in a saucepan.
- Bring to a gentle boil, stirring so the sugar dissolves.
- Reduce heat and simmer for 50 minutes, stirring every few minutes.
- Cook until reduced to about 1 cup and slightly thickened.
- Cool completely. It will thicken more as it cools.
Sweet Potato Pie Ingredients
- 1 frozen pie crust, thawed
- Filling:
- 3 medium–large sweet potatoes
- 1/2 cup condensed milk
- 1/2 cup coconut sugar
- 2 tsp vanilla extract
- 2 eggs
- 1/2 cup butter, melted
Instructions
- Preheat oven to 350°F.
- Bake sweet potatoes until soft, then peel.
- In a blender or food processor, combine the sweet potatoes, condensed milk, coconut sugar, vanilla, eggs, and melted butter.
- Blend until smooth, don’t over mix.
- Pour the filling into the thawed pie crust.
- Bake for 50–60 minutes, or until the center is set and a knife inserted near the middle comes out mostly clean.
- Cool before slicing so it sets properly.
