– 2 cups of flour
– 2 cups of sugar (cane sugar or coconut sugar)
– 3/4 cup cocoa powder
– 2 tsp baking soda
– 1 tsp baking powder
– 1 tsp salt
– 1 cup oil (grape seed oil, olive oil, or canola oil)
– 1 cup milk (regular milk, oat milk, almond mil, or soy milk)
– 1 cup boiling water
– 2 eggs, beaten
– 2 tsp vanilla
Mix dry ingredients first, then slowly add wet ingredients.
Add boiling water last and slowly stir constantly as it’s added.
Bake at 350 F fro 30-35 minutes
Let cool and add icing:
1/2 cup water
1/2 cup butter
1 teaspoon vanilla
1 cup baking cocoa sifted
3 1/2 cups powdered sugar sifted
3 tablespoons heavy cream more or less for consistency
Heat water, butter and vanilla together in sauce pan on stovetop until melted.
Remove from heat.
Stir in one cup cocoa.
Stir in powdered sugar, sifted.
Stir in heavy cream, up to 3 tablespoons (or more) until you get the desired consistency.
Taste until to your liking, pour over cooled chocolate cake.
Ice cake by spreading icing over cake top and pour over the sides. Icing will harden as it cools.
