Ingredients:
3 large onions finely chopped
Half a head of garlic finely chopped
1 TBS grated ginger
1 TBS tumeric
1 TBS cummin
1 TBS fenugreek
2 TBS garam masala (nutmeg, pepper, fennel, clove, cinnamon, bay leave, cardamon, cummin, red chili powder, coriander seed)
5 bunches of spinach
1/2 pound extra firm tofu
Cup of heavy cream
Lemon juice and salt to taste
Directions:
Fry the onion and garlic with the spices.
Chop spinach and add it to the spices, add heavy cream and cook on medium heat for 15 minutes
Add tofu and cook for another 10 minutes
