Pasta Fagioli is a traditional Italian dish that can be found in all regions of Italy. It combines tasty beans (fagioli) with pasta, tomatoes, and vegetables!
Ingredients
3 cups kidney beans and/or white beans
1 tablespoon olive oil
4 stalks celery, finely chopped
4 medium carrots, finely chopped
1 large onion, chopped
4 cloves garlic, minced
broth or seasoning
1 teaspoon Marjoram
2 cups tomato sauce
3 table spoons tomato paste
1 cup short tube-shaped pasta, cooked and drained; or pasta of any kind
Instructions:
Cook the beans with salt and 2 cloves crushed garlic. Drain and wash when almost cooked.
Add onion, carrots, celery, tomato sauce, tomato paste, seasoning, broth, and more garlic. Cook until done.
Cook pasta on the side and combine.
Serve with olive oil.
Interesting facts: The dish is honored in the song “That’s Amore”, by Warren and Brooks (popularized by Dean Martin): “When the stars make you drool, just like pasta fazool, that’s amore”.
In Rome, beans are replaced by chickpeas creating the dish “Pasta e Ceci” (Wikipedia)
