These divine energy bites pack such a flavor and texture punch with only three ingredients!
The energy bites are also great for a quick snack, dessert or pre-workout treat.
2 cups roasted chick peas (unsalted, available in Indian food stores)
2 cups dried figs (unsweetened and unsulfered)
shredded coconut or sesame seeds
Place the chickpeas in a food processor and pulse until powdered.
Make sure to remove any tough stems from the figs.
Slowly add figs and pulse. It helps to cool the figs before adding to the mixture.
Roll into balls, cover with coconut or sesame and store in the fridge.
Alternatively figs can be replaced by dates, with the pit removed. We advice to soak them in water for a few hours prior to adding to the chickpeas.
